Zesty tomato sauce recipe

Ingredients:
25-30 small roma tomatoes-this is what I grew in the garden and tends to be the easiest for a sauce. Load them up on a plate, the plate should be covered.
2 garlic cloves
3-4tbsp olive oil
3 small banana peppers
1tbsp of butter
1.5 Cups of water
Seasonings:
1tsp of garlic salt
1 tsp of parsley (I used dried parsley)
chopped basil (fresh) 1 sprig or 1.5 tsp
2 bay leaves
1/2 tsp of red pepper
a few shakes of S&P
Directions:
Grab a large pot and begin boiling some water. While that is boiling prep your peppers and garlic. Skore an X onto the bottom of all of your tomatoes. Grab a large bowl and fill half way with ice water.
Once the water is boiling dump tomatoes into the pot and give them 30-60 secs. Remove tomatoes and add to the ice bath. Begin peeling the tomatoes and put back onto the plate. As you are peeling the tomatoes you can begin prepping the pot with olive oil, once it begins to heat a bit add the minced peppers ( give them a few mins). Continue peeling all the tomatoes and then add the chopped garlic (30 secs is all it needs before the tomatoes are added).
Once the garlic is in you begin adding the tomatoes while continuously stirring.
Add all of your seasonings except the butter. Let everything come together over the next 10-15 mins, the tomatoes should be breaking down as you bring to a simmer. I then added 1.5 cups of water, let it simmer for another 30-40 mins. Add the butter for some richness.
After you have had the sauce going for an hr. or so I would taste test and see if you need to add any additional water or seasonings.
You should have pretty close to a quart (large jar) of sauce. Let it cool and place in the fridge. #nutrition
This ratio and the fact that I had very flavorful tomatoes brings out a super zesty sauce with a ton of flavor!
